How to make the original
South Tyrolean apple strudel

The recipes of our chef Wolfgang will help you prepare some tasty dishes for your loved ones.

South Tyrolean apple strudel

Ingredients for the dough:

250 g flour
1/16 l water
2 tablespoons of oil
1 egg
1 pinch of salt

Ingredients for the filling:

1 kg apples (South Tyrolean apples)
150 g breadcrumbs
150 g butter
90 g sugar
40 g raisins
a little rum (to taste), lemon juice, cinnamon, melted butter for spreading salt

Preparation

Sift the flour and mix it with egg, salt and oil with one hand, adding water with the second hand as needed until the dough has the right consistency. Now knead the dough vigorously with both hands on a work surface until it is smooth and supple and forms a ball. Let the finished dough rest for half an hour.

In the meantime you can peel the South Tyrolean apples for the filling, remove the core and cut them into fine slices. Lightly fry the breadcrumbs in a pan with some butter and then place them on the finely cut apples, add the other ingredients (sugar, raisins, cinnamon) and stir in lightly with your hands.

On a floured tea towel, use a rolling pin to drive out the dough, then use the back of your hand to pull out the dough very thinly from the middle (you should still be able to read a newspaper underneath). Spread the dough with the melted butter and spread the filling in the middle and almost the whole length. Now roll the dough tightly into a strudel from both sides by lifting the cloth (baking paper). Now lay it on the baking tray (don't forget the baking paper) and spread with some melted butter. Pour into the preheated oven and bake for about 1/2 hour at 180-200 degrees.
